Recipe for December!

This easy appetizer is delightfully spicy and quick to make.  Happy Holidays!

Hot Bean Dip
Prep Time: 8 minutes
Cooking Time: 12 minutes

Ingredients:

1 Tbl. vegetable oil
5 cloves garlic, minced
1 large onion, chopped
1 c. sliced jalapeno peppers (tamed gourmet nacho rings by Mezzetta)
2 c. mild, medium or hot salsa*
1 - 16 oz can nonfat refried beans
1-2 tsp. habanero chili sauce*
1 c. (4 oz.) shredded sharp cheddar cheese
Fresh ground black pepper and salt to taste
Baked or fried tortilla chips

  1. In a large non-stick skillet, heat oil. Sauté the garlic, onion and jalapenos over medium heat until onion is soft (about 5 minutes).
  2. Add salsa, beans and chili sauce and cook for 5 minutes, stirring occasionally. Add fresh ground pepper and salt to taste.
  3. Pour bean mixture into 8"x12" baking pan. Sprinkle with cheese. Broil 4 inches from heat until cheese bubbles about 2 minutes. Serve hot with baked tortilla chips.
bullet *The type of salsa (mild, medium or hot) and the amount of habanero sauce you use will determine how hot this dip becomes.
