A quick side dish loaded with nutrients and taste!...

Kale with Raisins & Sunflower Seeds
Prep Time: 8 minutes
Cooking Time: 8 minutes
Serves 4-6

 

1 bunch Kale
1 Tbl. vegetable oil (olive, peanut or grapeseed oil)
1 small onion, diced
¼ tsp. salt
2 cloves garlic, minced
¼ c. sunflower seeds
½ c. dark raisins or currents

  1. Wash the Kale. Cut the top leafy part from the bottom stems & discard stems. Chop the leaves into bite size pieces.
  2. Add oil to large skillet or wok. When oil is hot, add the onion and salt. Lower the heat & sauté for 3 minutes. Add the garlic & sauté for 1-2 additional minutes.
  3. Add the kale, cover and cook for 5 minutes. Remove from heat and stir in the raisins & sunflower seeds.
