Fantastic Fajitas
Serves 8

Marinade:
6-oz. can grapefruit or pineapple juice (3/4 c.)
1/8 c. lime juice
1/8 c. tequila
2 cloves garlic, minced
1/4 tsp. cumin
1/8 tsp. chili powder
Freshly ground black pepper to taste

Fajitas:
1 lb. boneless turkey or chicken breasts
1 large yellow onion, cut into 1/2" thick slices
1 yellow bell pepper, seeded & sliced in half
1 red bell pepper, seeded and sliced in half
8 - 10" flour tortillas
Optional: Salsa, light sour cream, & chopped cilantro

  1. In a large non-metallic container or plastic bag combine the juices, tequila, garlic, cumin, chili powder, and pepper. Add the turkey or chicken and cover or seal. Marinate in the refrigerator for 3-4 hours, turning several times.
  2. Bring the marinated meat to room temperature.
  3. Place the turkey or chicken in the center of a lightly oiled grill. Grill for 5-6 minutes per side. until the meat is no longer pink in the center. Brush the peppers & onions with a little oil. Cook over hot coals for 5 -10 minutes, turning several times, until soft. Wrap the tortillas in foil and warm over the grill after the turkey and vegetables are done. Remove the meat and vegetables to a cutting board and cut into bite-size strips. Toss the meat with the peppers and onions.
  4. To serve individually, place a small amount of meat & vegetable filling down the center of each tortilla, add desired condiments and fold up.
