Recipe for April, May, June

A client from Greece shared this recipe with me.  Filled with freshness and flavor.  It's a favorite in my family.

Traditional Greek Salad
Prep Time: 10 minutes
Serves 4

 

Salad:
2 ripe tomatoes
1 small English cucumber
1/2 red onion
1/4 c. Kalamata olives
1/4 c. Feta cheese, cubed or crumbled

Vinaigrette:
Juice of ½ lemon
1/8 c. red wine vinegar
1 small clove garlic, minced
1 tsp. dried oregano or 1 Tbl fresh oregano
Freshly ground pepper
1/4 c. extra virgin olive oil

1.      Cut cucumber in half lengthwise, then into ½-inch slices

2.      Dice tomatoes the same size as the cucumber pieces.  Cut onion into thin slices. 

3.      In a medium bowl, combine tomatoes, cucumbers, onions and olives.  Toss gently to mix.

4.      Whisk together all dressing ingredients except oil.  Gradually whisk in oil.  Pour over salad just before serving. 

5.      Sprinkle salad with crumbled feta and fresh ground pepper if desired.  Serve immediately.
