Recipe for January, February & March

A delicious soup you can have on the table in 20-minutes.

Cream of Broccoli Soup
Prep Time: 8 minutes
Cooking Time: 10 minutes
Serves 4

3-4 c. chopped broccoli crowns (2 crowns)

1/2 medium onion, coarsely chopped

1 stalk celery, diced

15 oz. can ready-to-serve chicken broth, preferably Swanson’s

12 oz. can low-fat 2% evaporated milk

2 Tbl. cornstarch

Salt and fresh ground pepper to taste

1/2 c. grated Swiss cheese (Gruyere)

 

1.      Place vegetables and broth in saucepan.  Bring to boil, reduce heat, cover and cook until vegetables are tender, about 8 minutes. 

2.      Whisk together milk and cornstarch.  Add to cooked vegetables.  Cook, stirring constantly, until soup begins to boil and becomes slightly thick.  Remove from heat.  Salt & pepper to taste. 

3.      Serve with cheese sprinkled on top.
