Recipe for March & April

Fabulous Fish Tacos
Prep Time: 10 minutes
Makes 6 tacos

16 oz. Orange Roughy or Cod fillet (may substitute boneless, skinless chicken breast) 
1 oz. pkg. Taco Spices & Seasonings (Lawry’s)
˝ c. light sour cream
2 Tbl. milk
1 Tbl. lime juice
1 tsp. vegetable oil
6 flour tortillas, 8-inch (soft taco size)
Cabbage, sliced

  1. Heat grill.

2. In small bowl, combine 2 teaspoons Chicken Taco Seasoning with light sour cream and milk.  Sauce should be pouring consistency, add more milk if necessary.  Set aside in refrigerator.

3. In small bowl, combine remaining seasoning, lime juice and oil.  Brush seasoning paste over entire fish.  Grill until fish begins to flake easily, about 10 minutes. 

5. Evenly divide fish among tortillas, top with cabbage and sauce, fold and serve.
