Recipe for March & April!

Portobello Mushroom & Swiss Cheese
Burger
Prep Time: 10 minutes
Serves 4
Ingredients:
4 Portobello mushroom caps, stems removed, rinsed &
drained
1-2 Tbl. Olive oil
2 red peppers, seeded & cut in half
4 slices of Swiss chess (preferably Gruyere or Jarlsberg)
4 large buns, Kaiser or Sesame
1-cup arugula leaves, rinsed and drained
Steps:
- Brush mushroom caps and red peppers lightly with oil.
- Over hot coals, lay mushrooms "gill" side
down in center of grill. Lay red peppers next to mushrooms. Cook about
5 minutes (until juices start to drip from the mushroom caps). Turn
and cook 5 minutes longer.
- Lay ½ of roasted red pepper on top of cap, cover
with cheese and continue to cook until cheese melts, about 2 minutes.
- As cheese melts, split buns, and lay cut sides down
on grill until lightly toasted.
- Serve each bun with cheese-topped mushroom, a mound
of arugula, and condiments (mustard & mayonnaise).
