This 20-minute chili is bursting with Mexican flavors! 

Mexican Chicken Chili
Makes 10 servings
Prep Time: 10 minutes
Cooking Time: 10 minutes

1 lb. boneless chicken breast, cut into 1-inch pieces
1 green bell pepper, diced
1 medium yellow onion, diced
2 cloves fresh garlic, minced
2 Tbl. chili powder
1-15 oz. can chicken broth, divided
1-15 oz. can garbanzo beans, drained
1-15 oz. can kidney beans, drained
1-15 oz. can diced tomatoes
1-15 oz can tomato sauce
1/3 c. fresh salsa
1/3 c. fresh cilantro sprigs, chopped
1 tsp. fresh lime juice
Cheddar cheese, grated (optional)

  1. In large skillet, heat 1/4-cup chicken broth. Add chicken, onion and green pepper. Sauté until chicken is cooked through.
  2. Add garlic and chili powder and sauté for an additional minute.
  3. Add remainder of the chicken broth, beans, tomatoes, sauce, and salsa. Heat thoroughly. Add fresh cilantro and lime juice. If desired, sprinkle grated cheddar cheese on top of each serving.
